I first started making this Barbecue Thai Chicken Pizza quite a few years ago, when I was experimenting with different pizza flavours.  It was an instant hit.  I love pizza as much as the next person, (and who doesn’t love pizza?) and I love mixing it up and making different types of pizza to suit different seasons, moods and occasions.

This Barbecue Thai Chicken Pizza is delicious ANYTIME. 

The sauce is a sweet and smoky blend of sweet chili sauce and your favorite barbecue sauce, there’s a bit of chicken for texture and meatiness, red peppers for crunch and cilantro for a fresh burst at the end.  I like to toast a few sesame seeds to add an underlying nutty flavor.  You use just ONE chicken breast for two pizzas and this ends up being a pretty cheap meal!

Bonus:  If you use our pizza dough recipe (linked below) this makes two 12-inch pizzas, and this pizza freezes super well (the texture of the cilantro isn’t 100% after being frozen, but I find I don’t mind).  Yay for freezer friendly meals!

Thai Barbecue Chicken Pizza – Step-by-Step Instructions

Thai Barbecue Chicken Pizza – Ingredients

Chopped Raw Chicken on White Board.

Preheat oven to 450 degrees F and make sure your racks are centered in the oven.

Chop one chicken breast into bite-sized pieces.  I like to use a fork to hold the chicken and avoid as much raw chicken on my hands as possible.   Heat a tablespoon of oil in a frying pan over medium heat and cook the chicken.

In a small bowl, combine 1/2 cup of your favorite barbecue sauce with 1/2 cup of sweet chili sauce.

Once the chicken is nicely browned, add a few tablespoons of sauce to coat the pieces and take it off the heat.

Slice a red pepper and a few green onions, and shred about 2 cups of cheese.  You can also rinse and pat dry a small bunch of cilantro and chop it for later.

Stretch prepared dough (we recommend our Easy Homemade Pizza Dough recipe – which makes enough for two 12-inch pizzas) over oiled pizza pans.  Top with the sauce, cheese, chicken pieces, red peppers and green onions.

Bake in preheated 450 degree F oven for about 12-14 minutes for one pizza, or 16-17 minutes for two pizzas, rotating them from top to bottom rack halfway through.  OVENS VARY – Check the bottom of the crust to make sure it’s browned and cooked through.

While pizza is baking, toast 1 tablespoon of sesame seeds in a dry frying pan over low heat until they are lightly browned.

When pizza is ready, sprinkle with toasted sesame seeds and chopped cilantro.

Ingredients

  • prepared pizza dough* Enough to make two 12-inch pizzas. Our recipe (linked below in the notes) will be big enough if you want to make your own
  • 1/2 cup barbecue sauce
  • 1/2 cup sweet chili sauce
  • 1 chicken breast
  • 1 tbsp olive oil
  • 2 cups mozzarella cheese shredded
  • 1 red pepper
  • 3 green onions
  • 3 tbsp cilantro
  • 1 tbsp sesame seeds

Instructions

  • Preheat oven to 450 degrees F and make sure your racks are centered in the oven.
