This Easy Oven-Baked Maple Squash is the perfect side side dish – both for simple weeknight suppers and for fancy holiday meals.
Easy, cheap and delicious, this squash can even be made ahead of time!
Let me be the first to say, I LOVE an easy side dish. Whether it’s for a regular weeknight supper, or for a big holiday meal like Thanksgiving or Christmas, an easy, delicious side dish is a gift.
This Easy Oven-Baked Maple Squash is just that.
We all have a lot going on. Life is crazy. Weeknight meals and holidays are even crazier! What I love about this maple squash (there are so many things, now that I start to think about them):
1. It’s super easy. Cut up your squash, drizzle it with delicious things, and bake it. DONE.
2. You can do most of the work ahead of time. You could do the cutting part ahead of time and have it ready to go in the oven, or you could even bake it ahead of time and just reheat it. This maple squash is very forgiving.
3. It’s cheap! Squash is SUPER cheap right now. Where I live it’s often on sale for $0.99/lb and I bet in big cities it’s even cheaper! Plus, if you garden, you can probably march out to your garden and pull out a big ol’ squash for FREE. Other than that this recipe just uses a bit of butter and a tiny bit of maple syrup (or honey). And salt. Always salt.
4. It’s delicious. Obviously, you have to like squash, but this is one of my favorite ways to eat it, and I’m not a raving squash lover. It’s sweet, buttery and salty. I ate five pieces as a mid-afternoon snack after I took the pictures for this post. No joke. 🙂
Okay, without further ado, I bring you, Easy Oven-Baked Maple Squash.
Easy Oven-Baked Maple Squash -Step-by-Step Instructions
Easy Oven Baked Maple Squash – Ingredients
Preheat oven to 350 degrees F. Use a big knife to cut your squash in half (be careful!) and use a spoon to scoop out the seeds and pulp. You can use any kind of squash except spaghetti squash.
Chop squash into crescents and arrange in an oiled baking dish.
Melt 1 tablespoon of butter and use a pastry brush to brush it all over the squash. You can skip this step if you want to, but I do like the buttery flavor.
Drizzle 1-2 tablespoons of maple syrup (or honey) over the squash. You can (and probably should) also re-drizzle them mid-way through baking (extra tasty). Sprinkle with salt and pepper.
Cover with foil and bake for about 50 minutes, or until you can pierce squash with a fork. (Re-drizzle with maple syrup part way through cooking). At the end, take the foil off and broil for a few minutes. After cooking, sprinkle with fresh salt, which really brings out the taste (both squash and maple syrup are fairly mild). Garnish with parsley if you want.
Enjoy! 🙂
