I find that in summer, I’m often in need of side dishes more than anything else.  So often, we’ll throw some pork chops or hamburgers on the barbecue and then I’ll be trying to figure out what to have with them.  I love easy ways of adding veggies to every meal, and this corn is absolutely delicious.

You can, of course, make this with fresh corn on the cob, and it would be incredible. 

But don’t feel like you have to!  This dish is just as tasty, much easier, and almost certainly cheaper when it’s made with frozen corn.

Frozen corn is one of those little gems I like to keep stocked in our freezer.  You could also keep a stash of lime juice and zest there, making this an absolute breeze to throw together, with ingredients you already have in your house!

This Easy Mexican Corn recipe doesn’t heat up the house and can be on the table in 5 minutes.  Perfect for a lazy summer night or a busy weeknight meal.

Easy Mexican Corn – Ingredients

Frozen Corn in Glass Mixing Bowl.

Stir together 2 cups of frozen corn and 4 tablespoons of water in a microwave safe bowl.  Microwave for 2 minutes on high.  Stir, and microwave for 2 more minutes.

Lime Zest on White Plate.

While corn is in the microwave, wash a lime, zest it and juice half or all of it (you’ll need 1/2-1 teaspoon of juice, so it depends on how lime-y you like it and how juicy the lime is).

Using a strainer, drain water from corn and return it to the bowl. 

Add 1 tablespoon of butter, 1/4 teaspoon of salt, 1/4 teaspoon of chili powder, 1/2 teaspoon of lime zest, 1/2 teaspoon of lime juice and a few grinds of fresh pepper. 

Stir together well and taste.  If you’d like it a little tangier from the lime, add another 1/2 teaspoon of lime juice.

Serve hot, cold, or at room temperature.
