I’ve been meaning to make meatballs for a long time now.  I feel like they’re a great freezer friendly meal, and awesome if you have little kids who like picking up small pieces of food and dunking them in yummy sauce.  

I love the fact that you can make a pretty big batch of these in not much time, bake them quickly and then have an easy supper or lunch to heat up or stash in the freezer.

A surprise bonus of these Greek Meatballs: my one year old, who has a list of about 10 things she will actually eat (so incredibly frustrating!) LOVES them. She’s not much of a meat eater AT ALL, and I honestly didn’t expect her to touch them.  Then she shocked us by devouring a bunch of them.  So I think we’ll be seeing a lot more Greek meatballs in our future!

Lucky for the rest of us, we love them too.  They’re really easy to make, use just a few pantry staples, and can freeze and thaw quickly!  Yes please!

These are delicious with our Homemade Tzatziki (Greek Cucumber Yogurt Sauce and Dip).  You can wrap them up in a pita, or eat them with rice or roasted potatoes.  YUM!

Easy Greek Meatballs (Baked!) – Step-by-Step Instructions

Easy Greek Meatballs – Ingredients

Chopped Garlic and Red Onion on Wooden Board.

Preheat oven to 350 degrees F and line a sheet pan with foil.  Chop 1 small red onion, and peel and mince 4 cloves of garlic.

In a large bowl, combine 2 pounds of ground beef (lean, if possible), onion, garlic, 1 egg, 3/4 cup of panko or breadcrumbs, 1/4 cup of dried parsley 1 teaspoon of oregano and 1 teaspoon of salt.

Mix it well to combine the meatball mixture.  I actually hate sticking my hands in raw hamburger, but I can’t really find any way around it.  Once my hands are in there it’s not so bad.  

Tip:  Make sure you wash your hands really well before and after.

Form mixture into meatballs and line them up on your foil lined pan.  Mine were around the size of golf balls.

Bake in preheated oven for 15-20 minutes.  You could start checking after 15 minutes – depending on how hot your oven runs they might be done.

Tip:   I ALWAYS test my meat with a meat thermometer to take the guesswork out of it.

Serve with our Homemade Tzatziki, pita bread and fresh veggies, or with rice, or roasted potatoes.  Enjoy! 🙂

Ingredients

  • 2 lbs ground beef (I used lean)
  • 1 red onion (a small one)
  • 4 cloves garlic
  • 3/4 cup panko (or breadcrumbs)
  • 1 egg
  • 1/4 cup dried parsley
  • 1 tsp oregano
  • 1 tsp salt

Instructions

  • Preheat oven to 350 degrees F and line a sheet pan with foil.
  •  Finely chop red onion, and peel and mince garlic.
  • In a large bowl combine ALL the ingredients and use your hands (wash them well before and after) to combine the mixture. Roll the meatball mixture into small balls (mine were around golf ball size) and line them up on the sheet pan.
  • Bake in preheated oven for 15-20 minutes.  You could start checking after 15 minutes - depending on how hot your oven runs they might be done.  I ALWAYS test my meat with a meat thermometer to take the guesswork out of it.*
  • Serve with our Homemade Tzatziki, pita bread and fresh veggies, or with rice, or roasted potatoes.  Enjoy! 🙂
