This Fresh and Easy Peach Salsa is the perfect summer recipe. It’s both sweet and savory, is delicious with tortilla chips, tacos or grilled fish, chicken or pork, and makes the best use of those last few peaches you have kicking around your fridge.

I really love ripe summer peaches. I don’t bother buying them any other time of year, because they really don’t compare. Juicy, sweet peaches, ready to be eaten as a messy snack, baked into desserts or turned into a simple jam, so we can have a little summer when the snow flies.
I’m also a big fan of fruit salsas, and this Fresh and Easy Peach Salsa is no exception. It’s an excellent way to use up a few extra peaches, but in my opinion, it’s also worthy of some purchased peaches, just for the recipe.
With just a few ingredients, the sweet summer peach is transformed into a sweet, savory, bright tasting condiment that is delicious on tortilla chips, in fajitas or tacos, or on grilled meat or fish.
I haven’t tried it with the Sweet and Smoky Dry Rub Mix yet but I think they would be particularly tasty together. I love that it’s both healthy and delicious!

I like this salsa best when it’s freshly made – all of the ingredients let out juice as they sit so it gets a little more watery. But hey – you might like that too!
Fresh and Easy Peach Salsa – Step-by-Step Instructions
Fresh and Easy Peach Salsa – Ingredients
Wash two peaches and chop them into bite-sized pieces.
Wash and seed a red pepper and dice into small pieces.
Mince about 1/4 of a red onion. You might use a little more or less depending on the size of your onion and how much you like onion. Start with a little less – you can always add more.
Wash and chop a small handful of cilantro.
Combine all the ingredients in a bowl. Add juice of 1/2 a lime. Stir it together and give it a taste. Limes can vary dramatically in how juicy they are. If it needs a little more zesty kick, add juice from the other half of the lime.
I love my handheld juicer (similar to this one) for quickly juicing lemons and limes.
Stir together and enjoy! 🙂
