Fresh and Easy Peach Salsa

This Fresh and Easy Peach Salsa is the perfect summer recipe. It's both sweet and savoury, is delicious with tortilla chips, tacos or grilled fish, chicken or pork, and makes the best use of those last few peaches you have kicking around your fridge.

Ingredients

  • 2 peaches
  • 1 red pepper
  • 1 red onion
  • cilantro
  • 1 lime

Instructions

  • Wash two peaches and chop them into bite-sized pieces.
  • Wash and seed a red pepper and dice into small pieces.
  • Mince about 1/4 of a red onion.  You might use a little more or less depending on the size of your onion and how much you like onion.  Start with a little less - you can always add more.
  • Wash and chop a small handful of cilantro.  
  • Combine all the ingredients in a bowl.  Add juice of 1/2 a lime*.  Stir it together and give it a taste.  Limes can vary dramatically in how juicy they are.  If it needs a little more zesty kick, add juice from the other half of the lime.  
  • Stir together and enjoy! :)

  • * I love my handheld juicer (similar to this one) for quickly juicing lemons and limes.
