Easy Oven-Baked Maple Squash

This Easy Oven-Baked Maple Squash is the perfect side side dish - both for simple weeknight suppers and for fancy holiday meals. Easy, cheap and delicious, this squash can even be made ahead of time!

Ingredients

  • 1 squash any kind except spaghetti squash
  • 1 tbsp olive oil
  • 1 tbsp melted butter
  • 1-2 tbsp maple syrup
  • salt
  • pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Use a big knife to cut your squash in half (be careful!) and use a spoon to scoop out the seeds and pulp.
  • Use the olive oil to grease the bottom of a baking dish that's big enough to fit your squash. Chop squash into crescents and arrange in oiled baking dish.
  • Melt butter and use a pastry brush to brush it all over the squash. You can skip this step if you want to, but I do like the buttery flavour.
  • Drizzle maple syrup (or honey) over the squash. You can also re-drizzle them mid-way through baking (extra tasty). Sprinkle with salt and pepper.
  • Cover with foil and bake for about 50 minutes, or until you can pierce squash with a fork. (Re-drizzle with maple syrup part way through cooking if you want). At the end, take the foil off and broil for a few minutes.
  • After cooking, sprinkle with fresh salt, which really brings out the taste (both squash and maple syrup are fairly mild). Garnish with parsley if you want.
