POTATO, BACON & EGG BREAKFAST

This Potato, Bacon and Egg Sheet Pan Breakfast is the perfect savoury breakfast or brunch recipe.

It’s easy, uses just ONE pan, and combines crispy potatoes, smoky bacon and cheesy eggs.

STEP 1 Get your ingredients ready

STEP 2 Peel and cube potatoes and then microwave

STEP 3 Chop bacon into bite-sized pieces

Since bacon can be expensive, use as much or as little as you want in this recipe

STEP 4 Toss potatoes, garlic, oil, seasoning salt and bacon on sheet pan and bake

We use olive oil in this recipe but you can use whatever oil you have on hand

STEP 5 Shred cheese and chop chives and parsley

You can use either fresh or dried parsley.  Did you know you can keep fresh parsley in your freezer?

STEP 6 Remove from oven, toss well and divide into 4 and crack an egg onto each section

STEP 7 Bake until egg whites  are set and until yolk is cooked to the level you like

You’ll have to look closely – the egg whites won’t look quite set, even though they are!

STEP 8  Remove from oven and sprinkle with cheese and herbs
