These Healthy Mini Meatloaves are a delicious comfort food that’s quick and easy to make.

Peel, dice and cook onions

Fresh parsley is always better but you can use dry if that's all you have.

Stir well to combine  all ingredients

Line a pan with foil, place rack on top and spray with cooking spray

Add ground beef to mixture, form into patties and gently place on rack

Combine ketchup, brown sugar and apple cider vinegar - divide into 3 bowls

Use 3 different bowls to avoid contaminating the glaze with raw meat.

Brush the glaze on the meatloaves and bake
