Get your ingredients ready

Zest lemon

Whisk yogurt, honey, butter,  eggs, vanilla and lemon juice

TIP 1

Microwave your lemon for 15 seconds before you juice it.  You'll get more juice!

Whisk flour, baking powder, baking soda, salt, lemon zest and blueberries

TIP 2

If you’re using frozen blueberries, leave them in the freezer until the moment you add them – this will reduce how much they colour your batter.

Mix wet and dry ingredients together

TIP 3

If you overmix muffins you will make them tough, because too much gluten forms in the process.

Scoop batter into muffin cups or greased muffin tins
