ZEST YOUR LEMONS

TIP 1

Stock up on lemons when they are on sale - freeze the juice and zest to use later!

TIP 2

Microwave your lemons for 15 seconds before you juice them to get more juice

WHISK YOGURT, HONEY, EGGS, BUTTER, VANILLA AND LEMON JUICE

If your eggs are cold, warm them up in a bowl of warm/hot water for a few minutes

WHISK FLOUR, BAKING POWDER, BAKING SODA, SALT AND LEMON ZEST - THEN ADD BLUEBERRIES

For frozen blueberries, leave in the freezer until the moment you add them – they won't color your batter as much.

ADD wet ingredients TO  the dry ONES and gently stir until *just* combined. Batter will be fairly thick.

If you overmix muffins you will make them tough, because too much gluten forms in the process.
